Fasting "musaca" with cabbage and rice

Finely chop the cabbage, knead a little with salt and pepper, then put it in oil. Add 1 tablespoon ground thyme, let it simmer.

Finely chop the onion and cook in oil, add the grated or chopped carrot. When they are hardened, add the rice, a little salt and optionally a little delicate. Cover with water (3 1/2 cups water) and bring to a boil over low heat.

When the cabbage is hardened, add the tomato paste and mix well.

In a bowl put baking paper, cut thin slices of tomato, put a layer of rice, a layer of kale and rice, depending on the quantities used and the dish in which you prepare, how big it is.

Place the pan in the oven for 20-30 minutes at 170 degrees. When it is ready, take it out and turn it over on a plate.

Sarmale with rice in cabbage leaves

ingredients: 250 grams of rice, a carrot, two onions, a tablespoon of tomato paste, a liter of borscht, a tablespoon of vinegar, salt, pepper, parsley and chopped green dill, a sweet cabbage, optional two to three tablespoons of oil.

How to prepare: Finely chop the onion and fry in oil or simmer with a little water. Add the washed rice and the carrot given through the small grater. Pour a little water and bring to a boil. Add the tomato paste mixed in two tablespoons of water, salt, pepper. When the stew has dropped and the composition is bound, remove from the heat and mix the chopped greens. The cabbage leaves are peeled off the back and scalded in salted water and a tablespoon of vinegar. Leave to cool and wrap the stuffing in the sarmale. Spread a few cabbage leaves on the bottom of the pot, then place the stuffed cabbage. Spread more cabbage leaves on top. The borscht is boiled separately and poured into the pot. Top up with warm water to cover. Let it boil, over low heat, for three quarters of an hour. Then put in the oven for another two hours.

It is called musaca any type of food prepared by alternating layers of vegetables and minced meat and is specific to many countries of the world. But I prepared the Greek version of moussaka (Moussaka), this being the most popular version. It consists of layers of eggplant and mashed potatoes, and a layer of bechamel sauce on top. It is a food that is best served the next day.

Because it is quite meticulous to prepare, it is good to prepare several portions at a time and freeze them.
