2. Use a Microplane Zester Instead of Mincing


Minced garlic and ginger add vibrant flavor to stir-fries, but all that fine chopping can be tedious. Rather than dirtying up a knife and cutting board, invest in a Microplane zester and effortlessly grate the garlic and ginger directly into the pan.

3. Consider the Salad Bar


When shopping at your local grocery store or even at the corner deli, don't overlook the salad bar, which is often stocked with hard-boiled eggs, chopped vegetables, washed salad greens, and crumbled cheese, which can be used to minimize time spent prepping ingredients at home. It's also great for cooks who live alone and may only need two tablespoons of chopped celery for a recipe instead of an entire cup's worth.

4. Line Baking Trays with Aluminum Foil


Say goodbye to scrubbing and scouring dirty baking dishes. Simply line them with aluminum foil before using (use two layers if there's a lot of sauce in the recipe), then throw away the foil and pop the pan back in the cupboard when cool. A similar time-saving trick also works for messy countertops — line the kitchen workspace with plastic wrap before cooking, then scoop up any dripping messes easily.

5. Use a Garbage Bowl


When prepping vegetables or other ingredients, throw the scraps into a large bowl next to your workspace rather than making repeated trips to the garbage can. And if you don’t want to dirty up a bowl, line it with a plastic bag leftover from the grocery store.

6. Get a Hand Blender


Hand blenders (also known as stick blenders) are great time-saving tools in the kitchen because they allow you to purée directly in the pot you cook in. This means no more sloppy transferring of soups to the food processor and back to the pot. The cleanup is also much easier.

7. Make Ice — But Not Out of Water


Rather than spending countless minutes squeezing lemons and measuring out the juice, fill up an ice cube tray with extra lemon juice after you've used part of the fruit. Whenever a recipe calls for lemon juice, simply unmold a cube and throw it into the dish. A standard ice cube tray holds about one and a half tablespoons of liquid per cube, and this trick also works for tomato paste, chicken or beef stock, and minced herbs.

8. Chop Herbs with Scissors


To chop parsley, cilantro, or other herbs quickly, place the leaves in a glass and snip using scissors. You'll have finely minced herbs in no time and no dirtied cutting board! Or, just cut a bunch of chives directly into the pan or onto your finished dish for garnish.

9. Leave the Lid On

When boiling water for pasta or for blanching broccoli, don't forget to leave the lid on top of the pot while bringing the water to a boil. It prevents heat from escaping and boils quicker than it would with the top off, yet so many of us forget to do this!

10. Invest in a Mini-Chopper

Sure, it's cheating, but a mini-chopper is really your best friend in the kitchen. You can pulse nuts quickly, whip up salad dressings, and dice vegetables effortlessly. An added bonus? You won't become teary-eyed from mincing onions anymore. The ingredients may not be quite as uniform in size as they would be if you had chopped them by hand, but wouldn't you rather save 10 minutes of time for, you know, enjoying that glass of wine you deserve for making dinner?

When you’re tired of cooking, these 10 easy recipes help you get food on the table ASAP

January’s days are short, and as the sun begins to dip, hunger sets in, reminding us that no matter how weary or frazzled, we’ll have to eat. Order a pizza, pour cereal in a bowl, warm up leftovers — there’s nothing wrong with that. But if you can muster the energy to pick up the phone or open the microwave door, you might have it in you to make something that will take less time than delivery.

Silken tofu on rice with a drizzle of soy sauce and chile oil quesadillas nubbins of cheese, a stack of crackers and an apple or pear scrambled eggs on a slice of toast angel hair pasta tossed with butter and lemon zest canned tuna forked through with mayonnaise and pickle juice — these are a few of my favorite ways to get a meal on the table in 15 minutes or less.

I dug through our Recipe Finder archives for more ideas, miracle meals that take minutes and feed at least two. They depend on quick-cooking proteins, pantry ingredients, condiments for hits of flavor and basics such as pasta, rice, bread and eggs. Many cook in one pan, and others are assembled in moments, but they’re all guaranteed to satisfy.

Cut and Quality

Roast beef doesn&apost refer to just one cut of beef.਎ye of round, bottom round roast, top round roast, top sirloin roast, and bone-in rib roast are all common. Whichever cut you choose, quality counts. Opt for USDA Choice or USDA Prime beef when possible.

Some say eye of round is the only cut that will produce a true roast beef. The eye of round comes from the back leg of the cow. It’s lean and somewhat tough, but roasting it takes it to tender, flavorful perfection.

Three pounds of eye of round or another boneless cut will feed four to six people.

How To Make Perfect Brownies

I’ve tried lots of brownie recipes: Boxes, scratch, frosted, plain, nuts, chips, fudge … Each of them has something to like, but depending on my mood I might want a change of pace.

Not any more. My wife found this recipe, and it’s perfect. I’m done looking. This is the brownie recipe that I’ll use from now on.


1½ cups sugar
¾ cup flour
¾ cup cocoa powder (see note below)
3 eggs
¾ cup butter, melted
½ teaspoon salt (if using unsalted butter)
¾ cup semi-sweet chocolate chips (see note below)


A NOTE ON CHOCOLATE: You’ll notice the list of ingredients is very short. That means the quality of the chocolate makes a huge difference. The chocolate flavor is front-and-center — not the sugar, not the richness, the chocolate. I used Ghirardelli unsweetened cocoa powder, and Ghirardelli semi-sweet chocolate chips.

The assembly is about as easy as you can get. Combine the sugar, flour, salt (if using unsalted butter), cocoa, eggs and melted butter and mix.

Do this by hand, until the dry ingredients are just incorporated into the wet, and stop. You don’t need to beat it, and in fact want to avoid producing gluten from the flour. (Kneading flour produces gluten, the springy protein that makes bread chewy.)

Stir in the chocolate chips.

Line a 9吉 baking dish with parchment. I over-did it a little bit here, because I wanted to be absolutely sure it didn’t stick. As long as you cover the bottom you should be good, as it will pull away from the edges while baking.

Pour the batter and spread it out. Don’t try to spread it like mayo on bread, or you’ll move the parchment around. Poke at it with the tip of a rubber spatula.

Bake at 325° for 20-30 minutes. It’s done when a toothpick inserted in the tallest part comes out clean. Keep in mind you’ve got chips in there. If you hit one with the toothpick it will have melted chocolate on it. You might need to poke a couple of spots to make sure you aren’t hitting a chip.

Very carefully lift the parchment out of the baking dish. Get a spare set of hands if you can.

Peel the edges and let cool for a few minutes before slicing.

Pour yourself a glass of milk, and that’s it.

How To Make Crêpes

10-inch nonstick frying pan or 8-inch crêpe pan


Make the batter. Place the flour, milk, eggs, butter, salt, sugar, and vanilla if using in a blender. Blend until the batter is smooth, about 20 seconds. Alternatively, whisk everything together in a bowl until thoroughly combined and frothy.

Let the batter sit. Cover and let the batter sit for at least 30 minutes at room temperature or overnight in the refrigerator.

Prepare to cook the crêpes. Before cooking the crêpes, assemble everything you'll need by the stovetop: the batter, the pan, the oil, the spatula. If your bowl doesn't have a pour spout, have a ladle or 1/4-cup measuring cup handy.

Cook the crêpes. Place a 10-inch nonstick pan or 8-inch crêpe pan over medium heat and add a small amount of oil to coat the bottom of the pan. Let it sit for a minute to get hot. Pour in about 1/4 cup of batter. Immediately pick up the pan and swirl it to coax the batter into an even layer on the bottom of the pan.

Flip the crêpe. When the crêpe has browned slightly on the bottom, carefully work a spatula underneath it and flip. Cook the second side briefly, just to set the batter.

Cool the crêpe. Tilt the pan and loosen the crêpe, then slide it onto a wire rack.

Continue making crêpes. Continue making crêpes with the rest of the batter, adding more oil as needed to keep the crêpes from sticking.

Stack and store. If not eating the crêpes immediately, stack them one on top of the other as they cool. If they seem sticky, place a square of plastic wrap or parchment paper between them.

Recipe Notes

Storage: Place the stack of crêpes in a resealable plastic bag and store in the refrigerator for a few days or in the freezer for a few months.
