I fried the eggplant one part in the pan and the other in the PHILIPS multicooker. I had a very large eggplant that absorbed 6 eggs.

Wash the eggplant very well and fry it with the peel. Cut the eggplant into thin slices, salt them and let them drain for at least an hour. Then pass them through a stream of cold water and let them drain a little more then wipe them with a paper napkin.

Beat eggs with salt and pepper. Pass the eggplant slices through the egg, then through the flour and again through the egg we heat them in hot oil on one side and on the other until they are browned. We take them out on a plate in which we put a napkin paper to absorb the oil.

Serve hot with slices of toast rubbed with garlic and tomatoes.
